Background:
The Chiapas region is home to Mexico´s largest & oldest coffee farms, some are more than a hundred years old. With the influence of the Atlantic Ocean on one side & the Pacific Ocean on the other side, the mountain slopes of the Sierra Madre create special microclimates for coffee farming. Mexico El Tucan coffee is decaffeinated by Mountain Water Process which involves sourcing natural mountain water from Pico De Orizaba soaking & washed the coffee numerous, times & then water is passed through a caffeine filter before being re-introduced to the coffee.
